I had a problem with the Jeep - Tire would spin then hook RPM climbs fast then drops when it hooks. Data logger shows a big hump, then drops and starts climbing again. TACH looked as yours does.

Fuel delivery is a possibility. Make sure regulator and line to carb are ahead of carb. Check float level and pressure. If you run higher pressure like 7 or 7 1/2, I would try a float setting of .425. Also make sure fuel isn't coming out of vent tube at launch. ( 90 degree spark plug boot facing forward on vent tube should take care of this)
As far as shift point , some transmissions will " lag" as much as 700 RPM. Just set accordingly.
These kind of things will give you fits. Hang in there!
Regulator is a foot forward of the carb.Run 6 1/2 psi. Float is set at .250, have ran this on numerous carbs and no issue. May want to try .425. Always use the spark plug boot. I agree it is blowing past the shift point setting. Thanks for the input and anything else you can add.

No data logger yet, starting to sound like a great investment though! Thought the same thing about batteries and changed them 10 runs ago, no change. Thanks for the reply, keep them coming.

Sent to ATI, Charlie said it checked out ok, he even put a new stator in the second time. I don't have a second converter, but Santa Claus is coming to town! Thanks!
