Will a stock 305 crank go 7500+rpm?
It will hold up well. I have run cast cranks in super stock engines that rev to 8500 rpm with no failures. You might also think about using the factory 305 rods. They are lighter than the aftermarket rods and would be plenty strong for the application you are talking about. Resize and some new high strength bolts.
