Run the 750 carb, 1 5/8" headers are fine, work with the collector length.
I'd look for a camshaft that is .550" + on the lift, duration @ .050" in the high 23x range on the intake side, high 24x range on the exhaust side, with a LSA of 110-112 degrees, to help with the low compression.

3-speed automatic?
Give it 5000-5200 + stall, you might be steep on the rear gear at 4.88's, but worth a try for 1/8th mile only, but I think consistency will suffer.
If you're going to try a pukeglitch, go up on the stall some more, like 5500+.
