The reason for that is that in Stock, certain individuals used a mechanism equivalent to a large Line Loc in the line between the clutch master cylinder and the throw out bearing, then a release button somewhere. Mashing down the clutch with the line loc closed held the clutch down even with no pedal pressure, and releasing it with the switch at the desired instant of launch. Since trans brakes are illegal in stock, why would this setup be any different? I agree that hydraulics would be far easier to install and engineer than mechanical linkage, but it's hard to get around the limitations of a mechanical clutch linkage that would prevent it from being anything but foot activated.
