I'm looking at getting into drag racing, I build my own engines and have my own engine shop; is this a bad class to try to get into?

It is a good class. Pretty simple engine wise, just a pounds per cubic inch class. Of course it is a non-V8 class. My uncle ran this class for many years from the Modified Eliminator days of J,K/Gas and then SS/BX and SS/AX with the Opel GT with a Buick V6. Up until recently he ran SS/TD with the same combination in a Chevy S-10 pick-up. Rich Oakes currently runs SS/BX, SS/CX, SS/GM and occasionally SS/DS(?) with his 3rd gen Camaro with a Chevy V6. Ed Newton is running SS/AX with his Monza.
Not too many heads-ups to worry about although at least one year there were 6 SS/AX'rs at Indy! There are others on this site that can help you out more I believe. Good luck, Have Fun!

If I were to run a inline 6 chevy can you run any cylinder head you want or does it have to be original factory?

A straight six will NO WAY be competitive against V6's (which in the 2009 rule book I looked at) seems to be the case. on a straight cu in comparison in this class. Suggest you rethink classes before investing time and money. Think 1985 when all the D/Dragsters became obsolete with straight 6 - then NHRA split out the V6 in its own class -- but I don't see that in the SS/MX rules???

SS/AX through SS/CX are owned by V6 motors, no chance in the world that an inline motor is going to be competitive. Under the index maybe but not going to in any way competitive against a V6. These classes were orig intended for imports and small motors, NHRA allowed V6's later (probably petitioned by someone) and the party was over after that. If I recall, SS/CX had a 11.35 index just a couple of years ago and got creamed in one fell swoop by a V6 car. The logical thing would have been to put a big weight adjustment for the V6's but that's not how it worked out.

ss/cx is 12.5 lbs/ci with a minimum weight of 1700

It takes a Splayed Valve V-6 to be competitive in SS/X classes. I haven't seen an in-line 6 run like the SV- V-6.
To build a SS A/X car it has to be very lite weight in the 2200 lb area. Anything bigger than a 280-285 cu in V-6 will make all the cars too heavy to compete. Most good are 280 and under. I have 2 - 278 cu in and a 266 cu in engine. It takes making 2.25 + Hp per cu in. This is a test pass in SS/DS which is like a SS/X class except there are some body rules and a 750 carb rule. Right now I'm out due to family health issues. If you want some good parts to start with let me know. I might consider selling the car.
