Canton, answers all my emails, and even sends me all the pictures I request of their pan, and baffels.... I would buy a Canton pan today (I think their oil control system looks like it would work) but they only offer it in a 6 qt. I like to run a 7-8 qt pan with only 5 1/2 qts in it to keep the oil as far away from the spinning crank/rods as I can... I also think their price is a little high for a "non-fabed" pan... But that's just me....LOL
