A lot of the neat ones, such as a 440 six pack Dart, and a 64/65 Chevelle 409, have already been mentioned.

Instead of trying to shoehorn the SOHC 427 in a Mustang, put it in a "taxi cab" trim version of the 67 Fairlane.

Or a Falcon with a 427 Tunnel port.

A 455 Ventura? A W-30 Omega? Cheap, unusual, and quick. Real sleepers, too.
