Default Decking SBC Dart Little M Blocks.

What is the most anyone has decked a SBC Dart Little M block? Has anyone ever taken one to a deck height of ~8.60in? This is a max effort small cube deal so not a typical combo you'd see everyday. Class rules are restricted to standard blocks so a short or mid deck block wouldn't be allowed due to the raised cam.

Nope. You will not have enough deck strength.
The Dart SBC Little M has a deck thickness of 0.675".
Going from 9.02" deck height to 8.60", you would be removing 0.42" of material.

You would need Chevrolet Mid-Deck Bowtie block, P/N 12480050 which is delivered with a deck height of 8.70" and can be dropped to 8.50".

Yes that has definitely been a consideration. It would leave around 0.2-0.250 (5-6mm) deck thickness. I know it is on the more extreme side but I have recently seen an iron eagle with just as thin a deck running a much larger bore than we ever would, and it's our there setting records.
