What is different about the 3956st vs 3056? And how would the st version work with an automatic?

The ST is a stiffer sidewall tire. Automatics will usually run the radials,but either one will work on an automatic just fine.

If your car can/will work on radials, there is absolutely no reason not to run them. If your car won't work on radials, make it work. It's worth it. I understand that it probably isn't possible with a stick car.
