If you are a true hands on guy, it could be done with a V8 car. By that I mean assembling your own engine, transmission, doing your own paint and body work, also wheeling and dealing through the AMC site, Ebay, Craigslist.
Biggest expenses, where you'll need to open the wallet wide, are cylinder heads done by someone competent, that will pass tech and not leave a bunch of ET on the table. Also, valvetrain, torque converter, new wheels and tires
Plus maybe 900 small items you don't know you'll need yet.
