I'll do some checking on the gear.
Off hand, I'd say 6500 shift and 7000 in the lights. I'd guess that the manifold and t.b. is designed to make torque to 6 grand anyway.
Once you figure the finish line rpm, then figure what the mph would be at a second under, then figure what gear and tire size it takes to get it there.

PS, I like the stick idea.
