Default Question about crate motor stockers for a newbie

I know very little about stockers and no one where I lives know anything about them so I have no idea of where to even start. I have a 68 Mustang coupe and would like to build a crate motor stocker. Looking for any help you can give. I know some combos are better than others so which motor can I or should I be looking to run in my car and what class would that put me in. What are you allowed and not allowed to do to the motors. I live In Virginia does anyone know an engine builder that understands crate motors and the rules that go along with them.
Also I know there is more than just the motor there is the transmission, converter, gear and suspension all working together that makes these car work and that a stoker is expensive, but ballpark how much does it cost to build one of these cars.
Any advice or suggestions would be greatly appreaciated.
