Can a bow style headliner be replaced with a fabric covered 1 pcs cardboard/molded unit?

As long as you have a Headliner and not exposed or painted metal....
You should be OK.

I have seen two different styles in A body mopars.

Can any good interior shop (if you can find one) do a molded headliner or are there places to order them?

Sometimes it can, sometimes it can’t....I have noticed a number of WEST COAST race cars with a one - piece floating style headliner...no board but the fabric is glued front and rear and then glued on the sides..

I believe you can order them for some popular cars,....AMEN on finding a good interior shop.....!!!!

Just hate spending $ on parts that don't make the car go fast. I think I might be able to template one and just cover it in fabric.

Tech will not have a problem with that...Do you have a roll bar in the car ?

I know of a few stock/super stock cars that have used adhesive backed felt squares applied directly to the roof metal. Somewhat tedious to do but those cars have always passed tech. You can get them at 'Michael's' craft shops, peel and stick, hold up well, couple of color choices.

I have also seen regular headliner material ( couple of fabric places in town here carry that material.) glued right to the roof metal using 3m spray adhesive.
